In the last few years cauliflower has become a really popular meat substitute, I’ve seen cauliflower buffalo or hot “wings” on the menu at a few different restaurants so I decided to come up with my own gluten-free version. This recipe is a great quick and easy, healthier gluten-free vegan alternative to hot wings that’s perfect for serving at game watching parties or just when you’re having a craving. I’ve included a vegan ranch recipe for dipping your “wings” in at the bottom.

INGREDIENTS:

1 head of cauliflower
2 cups garbanzo/chickpea or brown rice flour (I prefer garbanzo because it’s a little thicker)
1 cup aquafaba (garbanzo/chickpea brine – I just get a can or box of garbanzo beans and pour the top liquid/aquafaba into a bowl)
1 tablespoon vegan mayo (optional)
Coconut or avocado oil
Vinegar based red hot sauce of your choice, steer clear of anything with artificial ingredients

DIRECTIONS:

Put flour into small bowl and aquafaba into a separate small bowl, set aside
*mix tablespoon of vegan mayo with aquafaba for a thicker creamier substance if you would like
Break apart cauliflower into medium sized florets
Dip cauliflower florets into aquafaba so they are evenly coated
Place florets into bowl of flour and roll them around until they are evenly coated
Coat the bottom of a frying pan with oil and heat on medium-high heat
Place the coated florets into frying pan for 1-2 minutes each flipping them as needed so every side gets cooked and crisp evenly making sure not to burn them
*if you would like to cook them in the oven instead of frying place them evenly on baking sheet and bake at 375 degrees until they appear golden and slightly crispy
Remove florets from pan and place in medium to large sized bowl
Pour hot sauce over florets and toss them until evenly coated
Remove from bowl and serve.

Vegan Ranch Dressing

INGREDIENTS:

½ cup vegan mayo (I prefer Sir Kingston’s Fabanaise because it has real food ingredients and nothing bad for you in it)
1 tablespoon rice or hemp milk (unsweetened and unflavored)
¼ teaspoon black pepper
¼ teaspoon garlic salt
¼ teaspoon dried oregano
¼ teaspoon dried basil

DIRECTIONS:

Combine all ingredients in small bowl or jar
Stir or shake until thoroughly mixed
Pour into small serving bowl and serve
*if you like a thicker dressing add a little more mayo
