I know we’re heading towards summer so the first thing on your mind probably isn’t “pumpkin,” but these protein rich wellness cookies might have you thinking differently. Pumpkin is one of my favorite ingredients to bake with, it’s packed with tons of excellent vitamins and nutrients. But the healthy goodness doesn’t stop at pumpkin when it comes to these delicious cookies; with pumpkin, pumpkin seeds, chia seeds, and cashew this cookie recipe is a recipe for wellness. The best part? They’re vegan!

INGREDIENTS

1 ½ cup garbanzo flour (or 1 cup regular flour if not gluten free, but keep in mind the garbanzo flour adds a lot of protein)

1 ½ cup unrefined coconut sugar

1 can organic pumpkin

½ cup chia seeds

½ cup pumpkin seeds

½ cup chopped or crushed cashew pieces

1 teaspoon baking soda or apple cider vinegar

1 tablespoon vanilla

½ tablespoon cinnamon

1 teaspoon baker’s yeast (optional for a more fluffy cookie)

DIRECTIONS

Preheat oven to 350 degrees

Mix flour, sugar, baking soda (if using instead of vinegar), yeast, and cinnamon to mixing bowl.

Mix in pumpkin and vanilla (and vinegar if using).

Mix in chia seeds, pumpkin seeds, and cashew.

Mix all ingredients on high until thoroughly blended.

Using a spoon place small blobs of mixture onto greased cookie sheet (I use coconut oil) 1 to 2 inches apart.

Bake for 30-40 minutes until slightly golden around the edges.
